I recently shopped for granite countertops for my kitchen and would like to recommend the company I selected which is Rock-It Surfaces in Vista.

They were recommended by another Qualcommer and I am also very happy with the work, quality, reliability and prices.  They have a large selection and had the thickest granite at 3cm instead of 1.5cm or 2cm which requires a plywood underlay.  Their quotes were about $200 more than other places on Miramar Road (Tutto Marmo, Tosca, Brazil Stones, etc.) but Rock-It's granite was twice as thick and they were a lot easier to do business with.

Because of the thicker granite, there is no glued seam along the bullnosed, exposed edge.  It's just rounded and set on top of the counters with consistent thickness.

Rock-It is owned by two brothers who challenged us to find the seams in their showroom, which we couldn't find quickly.  Steve showed us his fabrication machinery and explained how they did the work, selected the templates based on the grains, and impressed us with his honesty.  He included for free some matching granite squares for inlays into the travertine tile backplash.  Their undermount sink prices are cheaper than Lowes and Home Depot, and they will attach the sink as part of the installation.

Sometimes choosing a contractor also comes down to who do you want in your home doing the work and do you trust them.  Other places had such used-car sales approach with multiple phone calls and dropping $1200 to match a competitor (they should have given their best price at the beginning), or just handing me business cards of fabricators but I don't know who these people are or what does their work looks like.

Their showroom location is a bit challenging in a Vista business park, but they are open on Saturdays and travel around the county.
